Carrot Ginger Quinoa Balls



Delicious no meat balls!!!!!

1 cup quinoa cooked and reserved (easier if you cook it and put it the Fridge or freezer so when you are ready to roll the balls it is failry cold)
2 grated carots
2 grated garlic cloves or diced very very small
Grated ginger about 1 tbsp
1 teaspoon of dry rosemary ( you could use fresh I only had dried spices)
1 teaspoon Oregano
1 tbsp Honey
1/4 to 1/3 of a cup of Chopped spinachs

Prepare all ingredients and mix in a bowl. Add quinoa when temperature has dropped. Do not be shy to taste and adjust seasonning... Ginger and garlic will taste strong when cold but flavors will blend together dont worry! Prepare small balls not bigger than golf size. I did a little smaller pingpong kinda thing ya know!! Pan seared until golden brown and served as is, with salad or grilled vegetables... I personally made a honey mustard sauce with it and it was just delicious!! Enjoy my balls !! Haha

Fiddlehead quinoa

Fiddlehead quinoa

2 small to medium carotts diced
1 green pepper diced
1 oinion diced
2 cloves garlic diced
1 cup of Red quinoa
Lemon juice and lime juice
1 tbsp of Sugar
2 to 4 tbsp Sambal holek or sriracha (depending on how spicy you can handle!!!!)
Pepper (lemon pepper seasonnings no salt added)
1/2 Package of soy ground chicken (Yves veggie cuisine product)
2 cups or more Fiddleheads (prepared and rinced)


Caramelized oinions and garlic stir fried all vegetables except fiddleheads. Add fake chicken and stir. Add seasonnings (pepper,lemon pepper,lemon juice ,sambal holek or sriracha ,1 tbsp vegan margarine, 1/2tbsp sugar or taste...water)
Dont let it reduce too much..... When fiddleheads are ready and rinced add to the pan
Serve on top of red or regular quinoa

Healthy tips!


When doing seafood or fish.... skip the béarnaise sauce which is very fattening and
use some fresh or dry herbs like rosemary thyme oregano parsley salt and pepper olive oil to grill the fish or seafood....deglaze with lemon juice and a sprinkle of sugar. When you"ll taste it : you"ll keep it!


Salad can be super healthy and help you with your diet....but it also can be an enemy. Why ? Dressing. Try to cut some slack on the dressing or to get it on the side at the restaurant. When doing homemade dressing use olive oil.... try to go easy on the sugar or syrup you put in... cut half of it with some lemon juice for a fresh taste and less calories! Plus the vitamin C content of the lemon juice helps in increasing the immunity power of the body, which can ensure your health and fitness.

Asian Tofu Salad


This salad was a success for a lot of people so I hope you"ll like it!

Slice all your vegetables and your tofu in julienne (see the image)

you will need

2 carotts
2 zucchinis
1 white onion
half a package of extra firm tofu (I only use unisoya tofu vegetable or herbs)


Dressing (do separately and stir very well : you want the peanut butter to break into a sauce)
1 tbsp of peanut butter
1 tbps of ketchup
1 tbsp of rice vinegar
a dash of soy sauce
a bit of olive oil
1 tbsp of honey or mirin sauce (asian sweet sauce)


Shake everything into a plastic lunch bowl to coat every little piece! Eat immediatly!

Vegetarian Chili Con "Carne"

Hey so there it is! A very healthy and easy way to make chili without the fat and the cruelty in the use of real meat hahaha!

3 garlic cloves chopped
1 onion diced
salt \ pepper
1/2 tbsp chili powder
1/2 tbsp cumin powder
1/2 tbsp chipotle powder
2 tbsp honey
1 habanero diced
1 jalapeno diced
1 cup of vegetable stock
1 can of diced tomatoes
1 tbsp of sriracha (any hot sauce but please no tabasco : it ruiiiins the taste)
1 package of mexican fakemeat (Yves product found in the vegetable section of any supermarket!)
1 can of mixed beans rinced

First start with a bit of olive oil in the pan to slightly brown your onions and garlic. Add your spices to it and enjoy the smell! Then after a few minutes (but dont wait too long you dont want anything to burn) add you hot peppers and the rest of your ingredients. Turn down the heat and let simmer for at least 30 minutes... You want it to reduce a bit or a lot...depending on how you like your chili!
Serve on salad or with tostitos chips or pita bread! Whatever you like! Enjoyyy

CRUNCHY SALAD! Inspired by the beautiful Nancy!

Hi guys! Im trying to keep up and come at least once a week....we"re busy with work and trying to find a house...and visitors from Qc and so on!! So here"s a very good and tasty salad for you guys. Super healthy super delicious and pretty filling!


A complete broccoli cut in pieces
Half an english cucumber diced
1/2 cup of dried cranberries or dried fruits you like
1/2 of pecan nuts or any nuts you like
1 tbsp of low fat mayonnaise
1 tbsp of plain low fat yogourt
salt and pepper

Mix everything together in a bowl and add a little more mayo or yogourt if not enough......but please don"t exagerate you don"t want your brocco and your cucumbers to become "moooshiiii" and the salad fattening. Its a super crunchy yummy salad you will love it over and over again!!!!! Enjoy and spread the word about healthy eating habits. Drink more water and exercise too! Life is good!!!!

Fast and Easy Zesty/lemon angel hair pastas!

1 Diced onions
1 diced red pepper
3 diced mushrooms
2 diced celery

1/3 cup of lemon juice
1/3 cup of sweet chili sauce
1 to 2 tbsp of zesty spices or bbq if you dont have zesty
1 package of meatless chicken strips
angel hair noodles

Cook the pastas and reserve them. Fry all your vegetables in a pan and add the seasonnings to it. When everything is ready add the angel hair to it and stir. Serve immediately and enjoy!
