For these yummy veggie enchiladas you will need ( My boyfriend made them it was very good and easy! Mexican vegetarian awesomeness)
1 big onion
2 garlic cloves
handfull of diced mushrooms
2x 540g canned black beans
1/2 of a big tomato sauce can
lime juice
1/2 cup chicken broth
1 diced red pepper
1 small can of kernel corn
Let everything cook and reduce a little for it to become a stuffing more than a sauce. Stuff a pack of small fajitas with this preparation top with the rest of the tomato sauce and cheese. Pop in the oven to broil for the cheese to melt. Take out of the oven and decorate with one tbps of sour cream on top and one tbsp of salsa. ENjoy!!!!
With my greatness and my extremely developed brain I took the rest of the stuffing and made very good Breakfast Tacossss!
4 hard boiled eggs chopped
re heat the stuffing
use 5 tacos shells
grated cheese
hot sauce
lettuce
Just make nice Tacos like you know best but instead of the meat you put the eggs! It is deliciiiiouss with the stuffing. My man was super happy and this breakfast contains lots of proteins and goodness for you to start your day. HAPPY HAPPY JOY

horseradish is the shit!
Here"s a nice dipping sauce or vinaigrette!
mayonnaise
good amount of parsly
horseradish
1 small garlic clove chopped
Mix everything and dip chips or vegetables or use for a vinaigrette with a chicken salad for instance! waaaaaaaawawiwa
For a little less fat cut the quantity of mayonnaise you wanna use in half and complete with plain yogourt or sour cream.

Laaazyyy... I am. Didnt come here in days. Im not so good to keep up doing something....besides eating loving my man and training...... Here goes some gooooooood stuff I made lately....MAN THAT WAS GOOD!
Chicken and Waffles. THE BEST SOUL FOOD EVER. YUUMMMY YUM!
4 chicken breast
1 egg and 1/2 cup of milk mixed together
1 cup of whole wheat flour
1 tbsp cayenne pepper
1 tbsp paprika
1 tbsp garlic powder
big pinch of salt and big pinch of black pepper
4 belgium waffles
hot maple syrup or home made syrup (brown sugar reduced in boiling water was fine!)
some goooood olg Franck"s Red Hot spicy sauce or any good hot sauce
Pre heat a deepfryer or and big casserole with vegetable oil in it.
Dip the breasts in the egg and milk and then cover with the dry mix. Double dip in the egg mixture and in the dry mix. Let go smoothly in the oil (carefull dont wanna burn lovely selves!) While they are cooking you wanna put your waffles on a baking sheet and warm them up for about 8 minutes in the oven. Just want them crispy and hot.
Leave the breasts until golden brown crisp and pop in the oven at 400 for 5 to 10 minutes.
When everything is ready put your nice fried chicken on the waffles. 1 breast = 1 waffle. easy.
Poor a nice amount of hot syrup on top. Poor some hot sauce (for us it was LOOOOOOTS of it :) ) on top of it all... Sprinkle some black pepper and enjoy this deliiiiiiiiiicious perfect greasy sweet spicy meal with some greens on the side. We had grilled aspargus. Fun. Deliciously Fun.

THE BEST MEATBALLLLLLS EVER!!!!!!
The secret is probably the horseradish.......which is unknown from a bunch of guys working at the grocery store....(idiots!)
annnnnnnnnnnnd off course my delicious mom"s sauce. Modified by me as always!
1 pound ground beef
1 shallot
1 garlic clove
1 tablespoon horseradish
1 tablespoon worcestershire sauce
salt and pepper
1 teaspoon of cayenne
1/4 cup of breadcrumbs soak in the same amount of milk
1 egg
Mix everything together with your hands and form the balls the size you want. I made small ones and it gave me around
30 meatballs. On a baking sheet make the meatballs cook and roast a bit.
THE SAUUUUUUUUUUUUCE!!!!
1/2 cup of chili sauce
1/2 cup of ketchup
1/2 cup of brown sugar
1 cup of cold water
2 tablespoons of lemon juice
1 tablespoon of worcestershire sauce
1 teaspoon of dijon mustard
1 teaspoon of samba holek (hot chili paste)
1 teaspoon of cayenne
Juste heat the sauce and poor over the meatballs in a cooking pan. Let everything cook in the oven for about 30 minutes at 400F.
Serve on fresh pastas or white rice with some greens on the side. Enjoy because you wont have anything left after the meal!

And so this is Christmas..... or a very good meal!
Cream Cheese Stuffed Rice Balls in its Green Curry Sauce with a Reduction of Red Wine! (geeeeez it was long to write :)! )
2 or 3 cups of warm sushi rice with a bit of rice vinegar in it
1/2 pack of cream cheese
Mixture of milk and eggs
Panko crumbs (asian version of bread crumbs)
Thinly sliced chicken
Long sweet red peppers thinly sliced
4 table spoon of Green Curry
1 can of Coconut milk
2 table spoon honey
Green food coloring
Red wine
sugar
Prepare the rice and when it is cooked put the rice vinegar in it and cover with saran wrap to keep it warm and moist.
With the help of paper towel dry the cream cheese and make small balls with it. Sorta small bite sizes.....
Creat a bigger ball with the rice and make a hole to put the cream cheese ball in it, then reforme in a nice round ball.
When finished, dip into the milk and eggs mixture and roll it in the Panko crumbs. Be sure that everything is nicely sealed and thick before you fried them.... you do not want the balls to open in your deep fryer....(gross).
Before you fry everything, because you do this at the very end just before serving, you want to prepare your chicken. Just make thin slices and grilled them in a pan. Put them in the oven at something around 200 to keep them warm. In the pan grilled the slice of red pepers and spread some sugar on top before deglazing with the red wine. When your peppers are done, keep the juice thats left in the pan to decorate at the end.
In a sauce pan bring to heat the coconut milk and the green curry. Pour some honey to make it a little bit sweeter and add the green coloring until the green you want.
When you are ready, fry your balls until a nice golden crust. Let your imagination go for the presentation or just inspire yourself with mine! Enjoy the spicyness of the curry sauce!!!
